Cilantro Lime Rice is the perfect addition to burrito bowls and pretty much any other spanish or asian dish you make, right? If cilantro tastes like soap to you (this is actually a thing for some people) LOOK AWAY! This recipe ain’t it for you.
This rice really tastes great with any dish if you want to switch it up from plain white rice. *The key to this rice is to use basmati long grain rice.* You will notice a big difference when using this as opposed to regular white rice.
Ingredients:
- 1 tablespoons extra virgin olive oil
- 1 cup basmati rice or other long-grain white rice
- 1 clove garlic minced
- 2 cups water
- Finely grated zest of one lime
- 1-2 tablespoons lime juice
- 1/4 cup lightly packed chopped cilantro (leaves and tender stems only)
Directions:
- Start by heating the olive oil over medium-high heat. Add the rice and stir to coat the rice. Stir occasionally until rice starts to brown. Add the garlic and cook one more minute.
- Add water and lime zest. Bring water to boil, then cover and turn the heat to low to maintain simmer
- Cook for 10-15 minutes undisturbed (Follow rice packaging instructions on time) remove from heat and let sit for 10 minutes
- Fluff the rice with a fork
- Stir in lime juice and cilantro
