Cooler weather is coming and this delicious slow cooker recipe is a staple in our house during the cooler months.
It’s extremely easy to make, made with fresh delicious ingredients and SO versatile.
Slow Cooker Chicken Ingredients:
- 2-2.5 lbs skinless boneless chicken breast
- 16 oz chunky salsa
- 1/3 cup Briannas Cilantro Lime Dressing + more as dressing
- 1/2 cup chicken broth
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
Other Ingredients for bowl:
- 4 cups cooked Cilantro Lime Rice (link to my recipe)
- 16 oz canned corn
- 16 oz canned black beans
- 2 small avocados
- 1/4 cup finely chopped cilantro
- 1 lime
Directions:
- Add all “slow cooker chicken ingredients” to slow cooker. Set on high and cook for 3-4 hours or until cooked through.
- Shred chicken and let it sit for 30 minutes
- Prepare other ingredients
- Assemble bowls, and enjoy!
